Bronze-die Gragnano paccheri or scialatielli tossed with sweet cherry tomatoes and clams, slow-simmered Sunday Neapolitan ragù, or hearty pasta e patate molten with smoked provola cheese in inland hill towns (€8–€13). In southern Italy's sun-drenched climate around Sant'Arpino, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.

In a town the size of Sant'Arpino (pop. 14,789), expect a central bar-caffè, a local panificio/alimentari, and a few family-run trattorie or pizzerie serving Provincia di Caserta residents (check hours ahead, as small-town kitchens often close one or two weekdays).
