Twisted trofie or trenette pasta tossed with fresh basil, pine nuts, garlic, olive oil, and sheep's cheese pesto alongside green beans and potatoes; or walnut-sauce pansoti pasta (€10–€14). In central Italy around Sestri Levante (Provincia di Genova), seasonal menus balance hill-town olive oil, hand-rolled pasta, foraged mushrooms, and hearth-grilled meats.
Wood-fired chickpea-flour pancake (farinata) with crisp lacy edges (€4–€6), paper-thin cheese-filled focaccia col formaggio, stuffed Ligurian vegetables (verdure ripiene), and fried anchovies in paper cones (€9–€15).
Dimpled golden focaccia genovese brushed with olive oil and coarse sea salt brine, sweet Taggiasca olives, terraced basil, chinotto citrus, and crisp coastal Vermentino, Pigato, and Sciacchetrà wines.
Locals dip a strip of warm salty focaccia straight into their morning cappuccino at the neighborhood bakery-bar—a beloved Ligurian morning custom across every coastal village and hillside borgo. In Sestri Levante (pop. 18,169), neighborhood bars, bakeries (forni), and trattorie across Provincia di Genova follow traditional regional dining hours—ask locally for the weekly market morning and patron-saint festival date.
