Because Mori sits in northern Italy's alpine/pre-alpine belt, cooler months emphasize butter-and-sage finishes, buckwheat or cornmeal polenta, and melted mountain cheeses.

Slow-braised venison or beef goulash with warm cornmeal polenta, crispy pork shank (stinco) with sauerkraut and roasted potatoes, and pan-seared alpine brook trout (€13–€19).
