Hand-rolled saffron malloreddus (Sardinian gnocchetti) with wild boar or pork sausage ragù, culurgiones (wheat-ear-braided dumplings stuffed with potato, pecorino, and fresh mint), and toasted fregola pasta simmered with clams (€10–€15). In southern Italy's sun-drenched climate around Orosei, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.

Slow-spit-roasted suckling pig (porceddu) scented with wild myrtle branches, coastal rock lobster or sea bream roasted over juniper embers, and crispy lamb offal braids (cordula, €13–€20).

Paper-thin crisp shepherd flatbread (pane carasau and guttiau brushed with olive oil and salt), aged Pecorino Sardo, golden seadas pastries filled with melted sheep cheese and bitter corbezzolo honey, and Cannonau or Vermentino wines.
