Hand-rolled saffron malloreddus (Sardinian gnocchetti) with wild boar or pork sausage ragù, culurgiones (wheat-ear-braided dumplings stuffed with potato, pecorino, and fresh mint), and toasted fregola pasta simmered with clams (€10–€15). In southern Italy's sun-drenched climate around Terralba, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.
