Hand-rolled saffron malloreddus (Sardinian gnocchetti) with wild boar or pork sausage ragù, culurgiones (wheat-ear-braided dumplings stuffed with potato, pecorino, and fresh mint), and toasted fregola pasta simmered with clams (€10–€15). In southern Italy's sun-drenched climate around Terralba, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.

Slow-spit-roasted suckling pig (porceddu) scented with wild myrtle branches, coastal rock lobster or sea bream roasted over juniper embers, and crispy lamb offal braids (cordula, €13–€20).

In a town the size of Terralba (pop. 10,151), expect a central bar-caffè, a local panificio/alimentari, and a few family-run trattorie or pizzerie serving Provincia di Oristano residents (check hours ahead, as small-town kitchens often close one or two weekdays).
