Hand-thumbed ear-shaped orecchiette with bitter turnip greens (cime di rapa), garlic, chili, and anchovy; cavatelli with mussels and white beans; or baked terracotta rice, potatoes, and mussels (tiella barese) (€8–€12). In southern Italy's sun-drenched climate around Collepasso, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.

In small towns, locals buy meat directly from the butcher counter at 8:00 PM and have it wood-roasted on the spot at a fornello pronto, eating at paper-covered tables with a carafe of house red wine. In a town the size of Collepasso (pop. 5,885), expect a central bar-caffè, a local panificio/alimentari, and a few family-run trattorie or pizzerie serving Provincia di Lecce residents (check hours ahead, as small-town kitchens often close one or two weekdays).
